SAUCES
INGREDIENTS
- 2 Cups Black-Eyed Peas or Red Beans
- 2 Cans Laser Sweet Corn
- 1 Medium Onion, chopped
- 2 Tomatoes, chopped
- 1 Red Bell Pepper, chopped
- 2 Cloves Garlic, minced
- 1 Teaspoon Ground Crayfish (Optional)
- 1 Bouillon Cube (Optional)
- Salt to taste
- 1 Teaspoon Ground Pepper or Chilli Powder
- 1/4 Cup Laser Pomace Olive Oil
- Water as needed
METHOD:
- Sort and rinse the beans. Boil them in water for 10 minutes, drain, then add fresh water and boil until tender (45 minutes to 1 hour). Drain and set aside.
- Heat oil in a large pot. Sauté the chopped onion until soft.
- Add minced garlic, chopped tomatoes, and bell pepper. Cook until the mixture is soft.
- Stir in ground crayfish, bouillon cube, salt, and ground pepper.
- Add the cooked beans and laser sweet corn to the pot.
- Mix well and simmer for 10-15 minutes, adding a little water if needed.
- Serve hot as a main dish or with rice or plantains.
