INGREDIENTS

Adalu
  • 2 Cups Black-Eyed Peas or Red Beans
  • 2 Cans Laser Sweet Corn
  • 1 Medium Onion, chopped
  • 2 Tomatoes, chopped
  • 1 Red Bell Pepper, chopped
  • 2 Cloves Garlic, minced
  • 1 Teaspoon Ground Crayfish (Optional)
  • 1 Bouillon Cube (Optional)
  • Salt to taste
  • 1 Teaspoon Ground Pepper or Chilli Powder
  • 1/4 Cup Laser Pomace Olive Oil
  • Water as needed

METHOD:

  • Sort and rinse the beans. Boil them in water for 10 minutes, drain, then add fresh water and boil until tender (45 minutes to 1 hour). Drain and set aside.
  • Heat oil in a large pot. Sauté the chopped onion until soft.
  • Add minced garlic, chopped tomatoes, and bell pepper. Cook until the mixture is soft.
  • Stir in ground crayfish, bouillon cube, salt, and ground pepper.
  • Add the cooked beans and laser sweet corn to the pot.
  • Mix well and simmer for 10-15 minutes, adding a little water if needed.
  • Serve hot as a main dish or with rice or plantains.
